Sunflower oil is a vegetable oil made from sunflower seeds, valued as a cooking oil for its mild flavour, high smoke point and relatively low cost. It is used for frying, sautéing and baking, and as an ingredient in salad dressings, mayonnaise and other prepared foods. Nutritionally it is rich in vitamin E and other antioxidants, which are beneficial for heart health and can help protect against certain types of cancer, and it is a good source of essential fatty acids important for maintaining healthy skin, hair and nails.
The market scope is substantial: sunflower oil is one of the most widely consumed vegetable oils in the world, with a global market size of approximately 18 million metric tons in 2021. Demand is driven by its versatility across cooking applications and its perceived health benefits, with low saturated fat content and a high level of unsaturated fats making it a popular choice among health-conscious consumers. Current trends include growing interest in organic and non-GMO sunflower oil, high-oleic varieties that offer a longer shelf life and greater stability at high temperatures, and rising expectations of sustainability and transparency about the environmental and social impact of production.
Production begins with the cultivation of sunflower plants in areas with moderate to high temperatures and ample sunlight, with the largest producers located in Russia, Ukraine and Argentina. After harvesting, the seeds are cleaned and processed to remove impurities and moisture, then crushed to extract the oil by either mechanical pressing or solvent extraction. Mechanical pressing uses a hydraulic press or screw press and yields a crude oil needing further refining; solvent extraction uses a solvent such as hexane, which is then evaporated to leave crude oil for refining. The refining sequence of degumming, neutralization, bleaching and deodorization delivers a clear, odourless, neutral-tasting oil ready for packaging and distribution.
