Chocolate is a sweet, usually brown, food made from cocoa beans, which come from the cacao tree. The beans are roasted, ground, and then combined with sugar and other ingredients, such as milk or vanilla, to make chocolate. It reaches consumers in many forms, including bars, candies and beverages, with varying levels of sweetness, bitterness and richness depending on the type of cocoa used and how it is processed. Chocolate has been used in cooking, baking and desserts for centuries.
Commercial production follows a defined sequence that a plant must be designed around. Cocoa beans are sourced from regions including West Africa, South America and Southeast Asia, harvested by hand and transported to processing facilities. The beans are fermented to remove the outer layers and develop flavour, then dried in the sun or using specialised equipment to reduce moisture content. Drying is followed by roasting to bring out flavour and aroma, and grinding into a paste called chocolate liquor. The liquor is pressed to separate cocoa solids from cocoa butter.
From there, cocoa solids, cocoa butter, sugar and other ingredients such as milk powder or vanilla are blended and refined to achieve a smooth texture and consistent flavour. Conching mixes the chocolate continuously at a high temperature to refine texture and flavour further, and tempering heats and cools it to specific temperatures to create a stable crystalline structure. The tempered chocolate is then moulded into bars, candies or other shapes and packaged for distribution.
The chocolate industry covers dark chocolate, milk chocolate, white chocolate, organic chocolate and chocolate-based products such as candies, beverages and baked goods. Growth is driven by increasing disposable incomes, growing urbanisation, changing consumer preferences and expanding distribution channels, while rising health consciousness has increased demand for healthier options such as dark chocolate with high cocoa content. North America and Europe dominate the market, with growing demand in emerging markets including Asia-Pacific, Latin America and Africa. Competition is intense, ranging from small-scale artisanal chocolate makers to large multinational corporations such as Mars, Incorporated; Mondelez International, Inc.; Nestlé S.A.; The Hershey Company; Ferrero SpA; Lindt & Sprüngli AG; Godiva Chocolatier, Inc.; Barry Callebaut AG; Meiji Holdings Co., Ltd.; and Ghirardelli Chocolate Company.
