Kneaders are essential in dough processing, employing mechanical action to knead and develop gluten in dough. These machines feature rotating arms or blades within a mixing chamber, efficiently combining flour, water, and other ingredients to form dough. Advanced designs ensure thorough mixing while minimizing dough temperature rise. Kneaders are critical in bakery operations, ensuring consistent dough quality and facilitating efficient bread production.

Kneaders, also known as dough kneaders or spiral mixers, are industrial baking equipment used to mix and knead dough in large quantities. They are used primarily in commercial and industrial bakeries, as well as other food production facilities that require large volumes of dough. The machine combines a spiral mixing arm with a rotating bowl: the arm rotates and stretches the dough in a spiral motion while the bowl turns in the opposite direction, so the dough is mixed and kneaded evenly and efficiently, resulting in a consistent and high-quality dough.

The working cycle follows five stages. Loading brings the ingredients into the mixing bowl, typically flour, water, yeast, salt and any other ingredients needed for the particular recipe. Mixing sees the spiral arm rotate around the bowl while the bowl rotates the opposite way, combining the ingredients into a dough. Kneading follows, where the twisting motion of the spiral arm stretches and works the gluten to give the dough its elasticity and structure. The dough is then left to rest in the bowl so it can relax and the gluten can develop fully. Finally it is discharged, usually through a chute or conveyor belt, for further processing or shaping into loaves of bread or pizza dough balls.

Major components are the mixing bowl, which rotates counter to the arm; the spiral mixing arm that does the actual mixing and kneading; the motor and gearbox at the base of the machine, which may include variable speed controls and automatic timers; a safety guard that prevents accidental contact with the mixing arm or other moving parts during operation; a control panel with digital displays and push-button controls; and a discharge chute that may be adjustable to control the size and shape of the dough as it leaves the kneader.

Kneaders are typically made of stainless steel for durability and ease of cleaning. They are commonly used for bread, pizza dough and pastry dough, and are an essential piece of equipment in many commercial and industrial bakeries.
