Other frozen seafood

Frozen seafood preservation demands meticulous handling and advanced techniques. Post-harvest, seafood undergoes thorough cleaning, precise filleting, and inspection. Rapid freezing, typically below -18°C, halts microbial proliferation and enzymatic deterioration, preserving freshness. Vacuum sealing in impermeable packaging prevents moisture loss and oxidative damage.

"Other frozen seafood" is the commercial category covering frozen products that fall outside the usual fish, shellfish and crustacean classifications. In practice it takes in cephalopods such as squid, octopus and cuttlefish, along with seaweed, sea urchins and jellyfish. For a processor, the label matters because these species behave differently on the line — in cleaning, shucking and freezing — even though they share cold chain infrastructure with more conventional seafood.

Commercial production follows four stages. Raw material is harvested or caught by fishing boats, aquaculture farms or seaweed farms. It is then brought to a processing plant where it is cleaned, shucked and packaged. Freezing follows, using blast freezing, plate freezing or IQF (individually quick frozen) freezing depending on the product form and the presentation required. Finally the product is packaged and stored at the appropriate temperature to maintain quality and freshness.

The freezing method is usually the defining decision in plant design. Blast freezing, plate freezing and IQF each suit different product geometries and pack formats, and each drives a different refrigeration load, layout and handling arrangement. Downstream, cold storage temperature discipline is what protects the quality built in upstream.
