Hygienic engineering is a design decision, not a cleaning problem. The point of the discipline is simple: use hygienic design from Day 1 and avoid retrofits. Once equipment, pipe routes and room surfaces are built, correcting a flat surface that holds water or a joint that cannot be cleaned means cutting into a running plant — at far higher cost and disruption than getting it right on the drawing board.

Three things carry most of the weight in a food and beverage facility. Sloped surfaces, so that product residue and wash water drain rather than pool. Easy-to-clean joints, so that fittings, welds and connections do not create crevices that hold soil out of reach. And CIP, so that product-contact circuits can be cleaned in place, repeatably, without dismantling the line.

Designed together from the outset, these choices decide how quickly a line can be turned around between runs and how confidently a plant can defend its cleaning results. Retrofitted afterwards, they rarely deliver the same outcome.
