Glazing equipment, integral in food processing, employs precise mechanisms to apply a uniform coating of glaze or syrup on products. Glazing equipment covers the machinery and tools used to apply a glaze or coating to the surface of baked goods such as pastries, bread and cakes. The glaze is usually a mixture of sugar, water and other ingredients that gives the product a shiny, attractive appearance and helps seal in moisture. Whatever the format, the basic principle is the same: lay down a thin, even layer of glaze or coating across the product surface.

At commercial scale, glazing machines apply a precise amount of glaze automatically and are commonly used in large-scale bakeries. Product is fed through on a conveyor belt or similar mechanism and passes under a glazing nozzle or spray gun, which deposits a measured quantity of glaze as the goods travel underneath. Spray guns work by compressing air to atomise the glaze into a fine mist, and are commonly used for large batches of pastries or cakes. Smaller and manual formats include glazing brushes for individual items such as donuts or muffins, pastry brushes for other coatings such as egg wash or melted butter, dipping tools for dipping individual pieces into a bowl of glaze, and non-stick silicone mats, which are coated with a thin layer of glaze so that lightly pressed products such as cookies or biscuits pick up the coating. Silicone mats are easy to clean and can be reused multiple times.

The major components of a glazing line are the glaze reservoir holding the glaze mixture, which can be made of materials such as stainless steel or plastic; a pump that transfers glaze from the reservoir to the nozzle or spray gun; the glazing nozzle or spray gun itself; a conveyor belt in larger-scale equipment to move product under the applicator for even coating; the brush or applicator used in handheld or manual equipment; controls such as speed, temperature and pressure settings to keep the coating consistent and even; and a cleaning system so the equipment is properly cleaned between uses, preventing cross-contamination and maintaining hygiene standards.
