In plant protein processing, drying equipment is indispensable for enhancing stability and shelf life. Employing techniques such as spray drying, freeze drying, or fluidized bed drying, these machines efficiently remove moisture from protein solutions or suspensions. Advanced designs optimize heat and mass transfer, while precise controls ensure ideal drying conditions, resulting in superior-quality dried protein products tailored for diverse food applications.

Drying equipment for plant proteins is the machinery used to convert extracted plant protein into powder form. Protein is extracted from sources such as soy, pea, rice and hemp, and then dried into a powder that is shelf-stable and easy to use across food and beverage applications. The resulting powders go into protein bars, shakes and supplements, and into product categories including protein powders, meat alternatives, nutritional bars and bakery products.

The working principle is the removal of moisture from the protein material using heat, pressure and air circulation, bringing moisture content down to a level suitable for storage and further processing. The sequence is consistent across equipment types: pre-treatment, where the material is ground, homogenised and mixed into a uniform slurry or paste; drying, where the slurry or paste is fed into the dryer and moisture is driven off; and collection, where the dried protein is collected and packaged for storage or further processing.

Three equipment types dominate. Spray dryers are the most used for plant protein powders: the slurry is atomised into small droplets and sprayed into a heated chamber, where water evaporates quickly to leave a fine powder. Fluidized bed dryers place the slurry into a bed of hot air that circulates around it to evaporate the water. Freeze dryers, also known as lyophilizers, freeze the extracted protein and hold it in a vacuum chamber under heat, so the frozen water sublimates directly from solid to gas, leaving a dry powder.

The market for this equipment is expected to grow significantly, driven by rising demand for plant-based protein products seen as a healthier and more sustainable alternative to animal-based protein. Asia-Pacific is expected to be the largest market, led by demand in China and India, with significant growth also expected in North America and Europe. Spray dryers lead today on high efficiency and their ability to produce a fine powder with good solubility, but interest is growing in fluidized bed and freeze dryers for product quality and energy efficiency, in equipment able to handle a wider range of plant protein materials including those with higher fat or fibre content, and in equipment suited to organic and non-GMO plant protein materials.
