Cold-pressed oil is edible oil extracted from seeds, nuts or fruits by mechanical pressing, without heat input or chemical solvents. The term "cold-pressed" indicates that extraction takes place at a temperature that is typically lower — 40-50fC (104-122fF) — than the temperatures used in conventional oil extraction, which often involves heat and chemical treatment. For a processor, that temperature ceiling is the defining process constraint around which the whole line is designed.
The processing sequence has five stages. Raw material is first cleaned and prepared to remove dirt, debris and foreign matter. It is then crushed or ground into a coarse paste, which increases surface area and facilitates oil extraction. The prepared material goes into a hydraulic or screw press that applies mechanical pressure to release the oil. Extracted oil may then be filtered to remove remaining impurities or particles, giving a clearer, purer oil. Finally, the oil is stored and packaged — cold-pressed oils are best stored at 50fF to 70fF (10fC to 21fC), and packaging protects the oil from light, heat and air, all of which degrade quality.
The commercial case for cold pressing rests on higher nutrient retention, richness in essential fatty acids, antioxidant properties, natural flavour and aroma, and a more environmentally friendly process. The trade-offs are equally real and need to be built into the business plan: lower yield, a slower process, sediment and cloudiness in the finished oil, variability in flavour and aroma, and nutrient losses.
