Fermented Foods as Functional Probiotics

Fermented foods are a rich source of functional probiotics, offering numerous health benefits. Through natural fermentation processes, beneficial bacteria thrive, enhancing gut health and aiding digestion. These probiotics strengthen the immune system, improve nutrient absorption, and may even boost mental well-being. Incorporating fermented foods into your diet can promote overall health and vitality.

Functional probiotics are live microorganisms — primarily bacteria and some yeasts — that confer health benefits beyond basic nutrition when consumed in appropriate amounts. Common examples include lactic acid bacteria, Saccharomyces boulardii, Streptococcus thermophilus and Bacillus coagulans. Probiotics contribute to gut health and have been associated with a range of other health benefits, which is what places them at the centre of the functional food category.

Fermented foods are rich sources of functional probiotics. These foods undergo a natural fermentation process in which beneficial bacteria, yeasts or fungi break down the components of the food, producing various compounds including probiotics. The organism selected, the substrate and the conditions under which fermentation is carried out therefore define both the character of the finished product and its probiotic content.

The commercial range is broad. Yogurt is made by fermenting milk with specific bacterial strains such as Lactobacillus bulgaricus and Streptococcus thermophilus. Kefir uses kefir grains, a mixture of lactic acid bacteria and yeasts. Sauerkraut is fermented cabbage made typically by lactic acid bacteria and is rich in vitamins, minerals and fibre, while kimchi is the traditional Korean fermented vegetable dish, usually from napa cabbage and a variety of spices. Miso is a Japanese seasoning made by fermenting soybeans with salt and koji, a type of fungus, and is often used for soups and sauces.

Beyond these, kombucha is a fermented tea beverage produced by fermenting sweetened tea with a symbiotic culture of bacteria and yeast (SCOBY). Pickles made from cucumbers or other vegetables can be fermented using lactic acid bacteria. Some cheese varieties, including cheddar, gouda and Swiss, undergo fermentation processes involving probiotic bacteria. Tempeh, a fermented soy product originating from Indonesia, is made by fermenting cooked soybeans with the fungus Rhizopus oligosporus. Each of these routes calls for its own culture handling, fermentation control and downstream processing in the plant.
