Commercial production follows six controlled stages: harvesting fresh vegetables at their peak ripeness and transporting them to the processing facility; washing to remove dirt or debris and sorting to remove damaged or diseased parts; brief blanching in hot water to stop enzyme activity and preserve color and flavor; dehydration by air-drying, freeze-drying or spray-drying to remove moisture; grinding the dehydrated vegetables into a fine powder using a grinder or mill; and sieving through a fine mesh to remove lumps or impurities before packaging into airtight containers.

The process must be carefully controlled so that vegetables are processed at the right temperature and humidity levels and the finished product meets all regulatory requirements for food safety and quality.
