Steam Generation for Food Processing

Steam generation plays a crucial role in food processing, and it's a fundamental part of many food production processes. Steam is widely used in the food industry for various purposes, including cooking, sterilization, heating, and cleaning. Steam generation is an energy-intensive process, and efficient steam systems are essential to minimize energy consumption and reduce operating costs in the food industry.

Steam is the vapour phase of water reached by boiling, and it underpins a large share of the thermal work done inside a food factory. Steam generation is used for cooking, sterilization, pasteurization, heating and cleaning, and it is favoured because it transfers heat efficiently and uniformly, allows precise temperature control, and brings sanitation properties to the process.

Food processors work with two broad categories of steam. The first is culinary steam, also called sanitary or clean steam, which is used for direct injection into the product or to clean and sterilize product contact surfaces. The second is plant steam, also referred to as utility steam or simply steam, used for indirect duties. Deciding which category a duty requires is the first design question, because it determines generator selection, distribution material and treatment.

Steam reaches the product through several equipment types. A shell and tube heater heats a flowing liquid by condensing plant steam or a pumped heat transfer media. A steam injection heater is a direct-contact process in which culinary steam is mixed with a pumpable food or ingredient. Steam infusion heats the product with relatively low-pressure culinary steam. Steam sparging is common in open tanks or kettles containing liquid products or water. A steam jacketed kettle distributes steam over a wide surface area through a thin space formed between two parallel metallic surfaces. A drum dryer uses internally heated metallic drums on which a thin, uniform layer of wet material is applied. A space or air heater achieves the high temperatures and moisture levels required to sterilize enclosed surfaces in food processing equipment.

The choice of steam generator depends on the specific food processing requirements, the energy source available at the site, and operational efficiency. Getting that choice right early keeps utility sizing, product quality and cleaning capability aligned across the plant.
