Clean-in-place (CIP) is a method used in the food and beverage industry to clean and sanitize equipment and pipelines without having to disassemble them. It's a critical process to ensure the safety and quality of food products and to maintain the hygiene of processing equipment.

Clean-in-place (CIP) is a method widely used in the food and beverage industry to clean and sanitize equipment and processing systems without the need for disassembly. The cleaning agents used in that circuit — commonly called CIP chemicals — do the actual work of removing soils, contaminants and residues from product-contact surfaces. They act through a combination of physical and chemical mechanisms, weakening the connections between soil and system surfaces by combining chemistry, temperature, cleaning times and mechanical force. Getting that balance right is what separates a CIP programme that genuinely cleans from one that merely circulates liquid.

Alkaline detergents are used to remove organic residues such as fats, oils, proteins and carbohydrates, typically formulated around sodium hydroxide or sodium carbonate with surfactants. Acid cleaners tackle what caustic cannot: mineral deposits, scale and inorganic residues that alkaline detergents might not be able to break down effectively, using phosphoric acid, nitric acid or sulfuric acid. Chlorine-based sanitizers, such as sodium hypochlorite, are used as sanitizing agents due to their strong antimicrobial properties.

For sanitizing duty, peracetic acid is a powerful sanitizer and disinfectant effective against a broad spectrum of microorganisms including bacteria, yeast and molds, and is typically supplied as a blend of peracetic acid, hydrogen peroxide, water and acetic acid. Hydrogen peroxide is used both as a sanitizer and a bleaching agent and effectively eliminates a range of microorganisms. Enzymatic cleaners — enzyme blends with surfactants, stabilizers and additives — are used for targeted cleaning, such as removing proteins or starches from equipment surfaces.

For a plant owner, chemical selection is not a purchasing decision made in isolation. The soil type on the line, the surface materials in the circuit, the available temperature and the contact time all determine which agent belongs in which step, and in what sequence alkaline, acid and sanitizing stages are run.
