Refining and processing plants for fats and oils are industrial facilities where various types of fats and oils, typically derived from plant and animal sources, undergo a series of physical and chemical processes to purify, modify, and enhance their quality for various applications, including food production, cosmetics, pharmaceuticals, and industrial uses.

Refining and processing plants for fats and oils are facilities that transform crude oils and fats into high-quality finished products suitable for use in food, industrial and other applications. The working principle is consistent across configurations: remove impurities and improve the quality of the crude oil or fat through a series of physical and chemical processes, so the finished oil meets the quality and stability expected of it.

A typical process route runs through degumming, which removes phospholipids, gums and other impurities from crude oil using water or an acid solution; neutralization, which removes free fatty acids by adding an alkali solution such as sodium hydroxide or sodium carbonate; bleaching, which removes pigments such as chlorophyll and carotenoids using an adsorbent such as activated carbon or bleaching clay; and deodorization, which removes odors and flavors by steam distillation or vacuum stripping. Two further unit operations shape the product rather than clean it: hydrogenation adds hydrogen to unsaturated fats and oils to increase stability and shelf life, and is commonly used in the production of margarine, shortening and other food products, while fractionation separates fats and oils into different fractions based on their melting points to produce speciality fats with specific properties. Finished product is packaged in bottles, drums or tanks and stored in temperature-controlled environments to protect quality and stability.

The end-product range these plants serve is broad: cooking oils from soybean, canola, sunflower and palm; margarine and shortening as substitutes for butter in baking and cooking; confectionery fats made using fractionation and hydrogenation for chocolate and candy; milkfat products such as butter oil and anhydrous milkfat for cheese, ice cream and yogurt; bakery products including bread, pastries and cakes; snack foods such as potato chips, crackers and popcorn; and vegetable oils used as a fat source in infant formula.

According to a report by Research and Markets, the global market for fats and oils is expected to reach $247.8 billion by 2027, growing at a CAGR of 3.6% from 2020 to 2027. Major players operating in the industry include Cargill, Wilmar International, Archer Daniels Midland (ADM), Bunge Limited and IOI Corporation, offering physical refining, chemical refining, enzymatic refining and fractionation technologies. Asia-Pacific is the largest market for refining and processing plants, with China and India the two largest markets in the region on the back of high demand for cooking oils, margarine and other food products. Demand is also driven by biofuels and industrial applications, with vegetable oils and animal fats increasingly used as feedstocks for biodiesel production and specialty fats and oils used in cosmetics, personal care products and other industrial applications.
