Sugar confectionery is a broad category of food products made primarily from sugar and other sweeteners. These products are typically high in sugar content and are designed to provide a sweet, indulgent treat — a category that spans hard boiled sweets, gums, jellies and similar lines built on the same underlying sugar chemistry.
Commercial production follows a defined sequence. Ingredient preparation involves measuring and mixing the sugar, corn syrup or other sweeteners, water, and other ingredients such as flavours, colours and additives. The batch is then mixed in a large mixing kettle or machine. Cooking follows, to a specific temperature and for a specific period, depending on the type of confectionery being produced. The cooked mass is shaped by pouring onto a flat surface or into moulds to give it the desired shape. Finally, the product is cooled by placing the confectionery in a cool room or refrigerator, or by passing it through a cooling tunnel.
For a plant owner, the cook step and the cooling step are the two that most shape the equipment specification, because both are governed by the particular confectionery type being made rather than by a single universal setting. Line layout has to accommodate the kettle or mixing machine, the cook stage, the depositing or moulding surface, and the cool room, refrigerator or cooling tunnel that follows.
