For a processor, the pistachio kernel is the base for a broad product portfolio. Pistachio butter is a spread made from ground pistachios that can substitute for peanut butter. Pistachio milk is a plant-based milk made from ground pistachios, used as a dairy milk substitute in cooking and baking. Pistachio flour, also from ground nuts, substitutes for wheat flour in baking. The commercial chain runs from growing through harvesting, processing, packaging and distribution. Pistachio trees require specific environmental conditions — warm temperatures, ample sunlight and well-drained soil. Nuts are harvested in the fall when ripe, either by hand or mechanically depending on orchard size. Processing removes the inedible outer hull, after which the nuts are either roasted, which enhances flavour and texture, or left raw depending on intended use. Packaging in bags, boxes or cans keeps the product fresh and safe and carries labelling and branding, and the finished product then moves to wholesalers, retailers and other customers, with transport and storage managed to maintain quality and safety.
