Commercial production runs through four stages. Ingredient preparation follows the recipe and may involve chopping herbs or vegetables, measuring out liquids and powders, and preparing any emulsifiers or stabilizers required. Blending combines the ingredients in a mixer or blender to create a smooth and consistent texture. Emulsification follows, where an emulsifier such as mustard or egg yolk may be added to help stabilize the mixture and prevent separation, and the mixture is emulsified to create a creamy and consistent texture. Finally, the finished dressing is packaged in containers such as bottles or pouches for distribution and sale.
The commercial case is steady rather than explosive. The global salad dressing market was valued at $3.5 billion in 2019 and is expected to reach $4.7 billion by 2027, growing at a CAGR of 3.8% during the forecast period.
