Proving equipment — also called proofing equipment or proofers — is used in the baking industry to give yeast-raised dough the environment it needs to rise properly before baking. The equipment creates a warm, humid environment that promotes yeast fermentation, allowing the dough to rise and develop its characteristic texture and flavour.
The working principle is control of three variables inside an enclosed chamber: temperature, humidity and airflow. The controlled environment encourages fermentation, and stable temperature and humidity ensure the dough rises evenly rather than unpredictably from batch to batch. Temperature in proving equipment is usually set between 75-90°F (24-32°C).
Four types are commonly specified. A retarder-proofer combines a refrigerated compartment for dough retardation with a warm, humid compartment for proofing. A convection proofer uses convection heating and air circulation to hold consistent, controlled temperature and humidity throughout the chamber. A cabinet proofer provides basic temperature and humidity control for small-scale operations. An automated proofer uses sensors and controls to monitor and adjust temperature, humidity and airflow for optimal dough development.
