Potato peeling machines remove the skin or peel of potatoes quickly and efficiently. They are used wherever large quantities of potatoes have to be processed, including commercial kitchens, restaurants and other food service establishments, and they form the first step in most potato processing lines.

The working principle is abrasion. Potatoes are loaded into a rotating drum with an abrasive surface that rubs against them and removes the skin. The drum is usually made of a rough material such as abrasive carborundum, which is well suited to scraping off potato skin, and it is set in motion by an electric motor. The peeling result can be adjusted by setting the speed of the drum and the duration of the peeling cycle, which is what allows the machine to be tuned to potato variety, size and the degree of peel removal a downstream process needs.

The main components are the drum, made of stainless steel with a rough surface that helps remove the skin; a water supply system that rinses the potatoes and helps carry the skin away; the motor that powers the drum and the other moving parts; a control panel from which the operator adjusts drum speed, the amount of water used and other settings; and a drainage system that removes water and potato peels from the machine.

Around the peeling unit itself sit the handling and quality elements: an inspection system that checks the quality of the potatoes before they enter the peeling process, a conveyor system that moves potatoes through the machine and into the drum, and the peeling system responsible for removing the skin.
