CIP vs. Manual Cleaning

Cleaning and sanitation are crucial aspects of the food industry to ensure food safety, prevent contamination, and maintain the overall quality of products. Two common methods used for cleaning equipment and facilities in the food industry are Clean-in-Place (CIP) and manual cleaning.

Equipment cleaning is not a housekeeping task in a food or beverage plant — it is a process step. Residues, contaminants, allergens and microorganisms accumulate on equipment surfaces during production, and production runs can negatively impact the taste, appearance and texture of food products. Regular and effective cleaning practices are also essential for compliance with regulations and avoiding legal issues, they can extend the lifespan of food processing equipment, and clean equipment simply operates more efficiently.

Clean-in-place (CIP) is a method widely used in the food and beverage industry to clean and sanitise equipment and processing systems without the need for disassembly. It is an automated and efficient cleaning process that helps maintain hygiene and prevent cross-contamination in food production facilities.

The case for CIP over manual cleaning rests on consistency and reproducibility, time efficiency, reduced operator exposure and minimised cross-contamination risk. CIP systems are automated and follow predefined cleaning protocols, ensuring consistent and reproducible cleaning results every time, whereas manual cleaning can vary in effectiveness depending on factors such as the skill level of the operator. CIP processes are faster than manual cleaning, and they remove the operator from potential exposure to hazardous cleaning agents or contaminants. Closed systems and dedicated cleaning circuits for each piece of equipment reduce the risk of cross-contamination, which manual cleaning may inadvertently cause.

CIP also stands up better at scale. These systems are designed with hygiene and food safety in mind and are optimised for efficient use of water, energy and cleaning agents, often recycling and reusing cleaning solutions to minimise waste and environmental impact compared with manual cleaning. Cleaning is validated and documented, providing a clear record of procedures for regulatory agencies. And because CIP systems are designed to handle high volumes of equipment and can clean multiple units simultaneously, they suit large-scale operations where manual cleaning would be extremely time-consuming and impractical.
