It is an interdisciplinary field, combining principles from physics, chemistry and biology to understand and manipulate the culinary aspects of food, and it is built around discovering novel and creative mechanisms and results in cooking.

At its foundation is food science: studying the chemical and physical properties of ingredients to understand how they react and interact during cooking. On that base sit innovative techniques and tools — spherification, foams, gels and emulsification — used to create unique textures and presentations in dishes.

The field also examines the science of flavour combinations, or flavour pairing, and delves into the manipulation of textures and mouthfeel, aiming to enhance the overall dining experience. Finally, the approach often emphasises the visual presentation of food, turning it into a form of art on the plate.
