Pasta is an Italian noodle made from a dough of flour, water, and sometimes eggs. It is produced in a wide range of shapes and sizes — spaghetti, penne, linguine, fusilli and many more — and while it remains a staple of Italian cuisine, it is now consumed worldwide. It is served hot or cold and paired with various sauces, meats, vegetables and cheeses.

The market scope for pasta is broad and diverse, with the product consumed in many forms and preparations. Demand is also moving towards healthier and more nutritious pasta options, such as whole-grain and gluten-free varieties, which influences the ingredient handling and formulation capability a plant needs to build in. Major players in the market include Barilla Group, Nestle SA, De Cecco, Nissin Foods Holdings Co. Ltd., and New World Pasta Company.

Commercial production follows four stages. Ingredient preparation brings together flour, water and sometimes eggs, which are mixed in a large mixing bowl to form a dough. Dough processing kneads that dough, by hand or by machine, to develop the gluten and create a smooth texture. The dough then passes through an extruder, which shapes the pasta into forms such as spaghetti, penne or fusilli. Finally, the pasta is dried for several hours at room temperature or in a special drying chamber to remove excess moisture and preserve the pasta for longer periods.
