Coffee Processing
Coffee, the beloved beverage, starts its journey as a small brown bean on the Coffea plant, thriving in tropical altitudes with moderate moisture. The plant, part of the Rubiaceae family, flourishes with dark green leaves and fragrant white flowers, eventually bearing the coffee cherry. Inside these cherries, which turn from green to red as they ripen, lie the precious coffee beans. The anatomy of a coffee cherry is complex, with layers like the exocarp, mesocarp, and the slimy parenchyma. At its heart, the coffee beans are encased in a parchment-like endocarp, with each bean's halves protected by a silver skin. Harvesting coffee is a meticulous process, with Arabica and Robusta varieties picked at different times. Methods like fly picking, main picking, stripping, and cleanings ensure that only the ripest cherries make it to processing, which can be either wet or dry. Wet processing involves pulping and fermenting the beans, while dry processing allows cherries to sun-dry before hulling. Roasting transforms the beans, dictating their color and flavor. The process involves heating the beans to around 200 degrees Celsius, causing them to expand and change from green to various shades of brown, depending on the desired roast level—light, medium, medium-dark, or dark. After roasting, the beans are ground and sorted into grades based on size and quality. The highest grades, like Arabica Plantation A and Robusta Parchment AB, have no primary defects and exhibit distinct taste, acidity, body, or aroma. The grading scale ranges from Specialty Grade to Off Grade, with specific criteria for each. Finally, the coffee is packaged, with ground coffee going into glass jars and beans into jute bags or paper bags. This careful packaging preserves the coffee's quality until it reaches consumers. From the high-altitude plantations to the intricate roasting and grading processes, coffee undergoes a remarkable transformation.
