Allergen Management Program
An allergen management program is a systematic approach used to manage allergens in food production to ensure that the final product is safe for consumers with food allergies. A good allergen management program includes identifying allergens, conducting risk assessments, implementing ingredient control measures, designing facilities and equipment to prevent cross-contact, implementing cleaning and sanitation procedures, providing employee training and education, and verifying and validating the effectiveness of the program.
