Cheese, a staple in diets across the globe, has a rich history that stretches back to 8000 BC. It's not just a food item; it's a culinary phenomenon that has evolved with human civilization. From its humble beginnings, cheese has become a versatile component of modern cuisine, with its production intricately linked to culture and taste.
The journey of cheese begins with milk acidification and the addition of enzymes, leading to milk coagulation. The resulting solid curds are then separated from the liquid whey and pressed into molds to achieve their final form. When cheese is made without any additives except coagulating agents, it's known as natural cheese.
Conversely, processed or prepared cheese includes additional ingredients like flavoring agents, colorants, and stabilizers. Cheese can be categorized based on texture, preparation methods, fermentation period, and aging. There are natural cheeses, cooked pressed cheeses—made using thermophilic lactic fermentation and heated above 45 degrees Celsius—and stretched curd cheeses, where hot curd is mechanically stretched. Processed cheeses, invented in Switzerland in the early 1900s, are natural cheeses further processed for added flavor and texture. Hard cheeses are aged longer, resulting in a harder texture due to lower moisture content.
The quality of cheese is influenced by several factors: the type of milk used, renneting temperature, curd treatment, souring degree, curing conditions, milling, salting, and any special treatments like pricking or brine bathing.
