A rice starch production plant is an industrial facility that extracts starch from rice grains. The output is a white, odorless and tasteless powder used widely across the food industry as a thickening and stabilizing agent, which makes the plant a supply point for confectionery, bakery, noodle, dairy and baby food manufacturers rather than a single-product line.
Processing runs in four stages. Cleaning and preparation removes impurities from the incoming rice grains and readies them for processing. In steeping, the grains are soaked in water to soften them and initiate starch extraction. Grinding and separation converts the softened grains into a slurry and separates the starch from the other components of that slurry, such as fiber and protein. Finally, purification and drying removes any remaining impurities and dries the starch into the final product.
End-use dictates how tightly the purification and drying stages must be controlled. Rice starch acts as a binding agent that improves texture in gummies, jellybeans and marshmallows; as a thickener in bread, cakes and pastries, where it also serves as a gluten-free alternative to wheat flour; as a texture and mouthfeel improver in noodles and pasta; as a stabilizer in yogurt, ice cream and cheese; and as a thickener giving a smooth, creamy texture to baby food products.
