Cold smoke equipment

Cold smoke equipment is essential for adding smoky flavor to food without cooking it. It operates at lower temperatures, typically below 100°F (37°C), ensuring the food remains uncooked while infusing it with a rich smokiness. Ideal for cheese, fish, and meats, cold smoke equipment offers a versatile and flavorful culinary enhancement for various dishes.

Cold smoke equipment infuses food with smoky flavour without applying heat. It consists of a smoking chamber or generator that produces cool or ambient temperature smoke, allowing smokiness to be imparted to ingredients like cheese, fish, meat or vegetables without cooking them.

The process works in stages. A smoke generator fuelled by wood chips, sawdust or wood pellets produces the smoke, which is directed into a sealed chamber or container holding the food, held at temperatures below 100°F (37°C). Fans or ventilation systems may be incorporated to control smoke circulation and maintain a consistent flow of cool smoke. Both smoke generation and the internal chamber temperature are monitored to hold the desired conditions, and filtration systems remove excess particulates from the smoke before it exits the chamber.

Typical product applications include cheeses such as cheddar, gouda and mozzarella, where cold smoking adds a smoky depth to their profiles; fish and seafood such as salmon, trout and mackerel, producing delicacies like smoked salmon; vegetables such as tomatoes, peppers and garlic for use in sauces, dips or roasted dishes; and butter, used in cooking or as a spread for a smoky twist.
