Smoking in meat production is the process of exposing meat to smoke from burning wood or other materials, to add flavor and preserve the meat. Though, Smoked foods must be eaten sparingly as smoked, cured, and salted meats are seen as stomach cancer risk.

Smoking is a common method used in meat production to add flavour and preserve meat. It involves exposing meat to smoke from burning wood or other materials, which gives the meat a distinct smoky flavour and helps to prevent spoilage. Wood smoke contains formaldehyde and acetic acid, among other chemicals, which slow the growth of microbes. The meats are hung or arranged on racks in an enclosed space so that smoke does not escape and instead permeates the food. In commercial smoking, steam pipes or convection ovens are occasionally used as an addition to wood fires.

Commercial operations generally smoke large quantities of meat or other foods in smoke rooms. These are typically enclosed spaces that are well-ventilated to allow proper circulation of smoke and heat, and they may be constructed using materials such as brick or concrete to help retain heat and smoke. They may be outfitted with special equipment such as smokers or smoke generators, and may be required to comply with health and safety regulations, including guidelines for ventilation, temperature control and sanitation.

Four methods are used in practice. Wood smoking is the traditional approach, in which meat is exposed to smoke generated by burning wood, with different woods such as hickory, oak and mesquite creating different flavours. Cold smoking is used primarily to add flavour rather than to cook or preserve, smoking meat at temperatures below 100°F (38°C) for an extended period, often several days. Hot smoking is carried out at 165°F (74°C) or higher, a temperature sufficient to both cook the meat and add flavour. Liquid smoking adds liquid smoke to the meat during cooking; liquid smoke is made by burning hardwood sawdust or chips and capturing the smoke in water, which is then condensed and bottled.

Smoking can pose health risks if not done properly. The smoke generated during the process can contain harmful chemicals such as polycyclic aromatic hydrocarbons (PAHs) and benzopyrene, which are known carcinogens, and overconsumption of smoked meats may lead to an increased risk of certain types of cancers, heart disease and other health problems. Common smoked products include pork and beef hams, bacon bellies, sausages, smoked beef, smoked pork, smoked pulled pork, smoked jerky and smoked lamb.
