Honey, a sweet marvel from the industrious bees, undergoes a fascinating journey before reaching our tables. From the nectar collection by worker bees to the intricate dance of mouth-to-mouth processing reducing moisture content, honey is a testament to nature's ingenuity. Inside the hive, a constant 32.5 degrees Celsius aids in transforming nectar into the golden syrup we love. But the journey doesn't end in the hive; industrial processing takes over with uncapping, extracting, and purifying through decanting and filtration. Pasteurization follows, carefully heating honey to eliminate unwanted microorganisms without compromising nutrient content. The final steps include evaporation to perfect moisture levels, additional filtration, and bottling for distribution. Yet, this process is not without its hazards. Moisture is honey's enemy, with levels above 19-20% risking fermentation.
